This strainer by Nagomi is made in Tsubame City, Niigata — a region with centuries of craft metalwork tradition and a reputation for producing some of Japan's finest kitchenware. The fine-mesh bowl filters matcha cleanly and evenly before whisking, breaking up any clumps without interrupting the preparation. Tsuchime is a metalworking technique in which a hammer is used to work the surface of steel by hand, leaving a pattern of small, irregular indentations that catch the light differently at every angle. The handle carries the full tsuchime finish: a surface that is quietly beautiful and becomes more familiar the more it's used.
